Tony's Cheesecake

CHEESECAKE

3       8-oz tubs of Sour Cream (room temperature)
4       8-oz packages of Philly Cream Cheese (room temperature)
1-1/2   cups of Sugar
6       eggs (room temperature)
1/4     Teaspoon Pure Almond Extract
1       Tablespoon Vanilla

o  With a mixer combine sour cream, cream cheese, and sugar.  
o  Then start adding one egg at a time.  
o  Add all flavourings.

Pre-heat oven to 425°F.

CRUST
3/4    cup sugar
3      cups graham cracker crumbs
1-1/2  stick real butter, melted.  (Do not overmelt!)

o  Mix thorougly, then press crust mixture along the bottom and side 
   into a medium size spring-form pan.  
o  Add filling.
o  Bake at 425°F. for 15 minutes, continue baking at reduced 
   heat at 325°F. 
o  When done baking, turn the oven off but LEAVE cake in the oven 
   for another 15 minutes.
o  Remove from oven.  Leave the cheese cake in the spring-form and 
   let stand until COMPLETELY cool!
o  Remove from spring-form and prepare to gain weight.
