Ingredients: ------------- 1/2 cup olive oil 2 large yellow onions, diced 2 cloves garlic, minced 1 red pepper, largely cut 1 green pepper, largely cut 2 28-0z cans crushed tomatoes 1Tbsp cumin 1 tsp cayenne, to taste 1 pkg frozen corn 2 cans black beans, or chickpeas or mix theroff 1 small carrot, julienned 1.5 cup picante or hot chili sauce salt & black pepper to taste grated cheddar (optional) cashew nuts (optional) Saute the onions in the olive oil. It is very important not to burn the onions or they will get a bitter taste. You can use cooking wine instead of the oil to cut out the fat (but does not taste the same!) Add garlic a bit later. After the onion and garlic have turned golden brown, add cumin, cayenne, and whatever other spices you have in mind. Fry the whole thing for a couple of minutes. Next, add the peppers, and saute them for a few minutes. Put the crushed tomatoes, corn, beans and picante or hot sauce into the crock pot, and add the onion mixture. Cook on high for 1 hour and then on low for about 9 hours. Serve with grated cheddar and cashew nuts, if so desired. I tried pine nuts and also taste good. The taste of the pine nuts give it a bit of a 'swing' :-) |
