1 cup dates, finely chopped 2 cups boiling water 2 tsp. baking soda in water Pour water over dates, let cool. 4 cups flour 1 tsp. salt 2 cups sugar 2 Tbs. butter 2 well beaten eggs 1 tsp. vanilla 1 cup pecans/walnuts, chopped Cream butter and sugar. Add eggs, then dates/water. Stir in rest of the dry ingredients. Fold in nuts. Be sure that the nuts are fresh and not stale. Bake at 250° for 2 hours in small breadpans. It takes less time if using loaf pans. |
