Gluten-free bread, 1

Bread Machine recipe


Ingredients:
� 1-3/4 cups buttermilk
� 1 tsp vinegar
� 4 egg whites
� 2 cups brown or white rice flour
� 1-1/4 cups tapioca flour
� 1-1/2 tsp dark brown sugar
� 3-1/2 tsp xanthum gum
� 1/2 to 1-1/2 tsp salt to taste
� 4-1/2 tsp active dry yeast 

Method:
� Use machine's rapid-bake setting in making this loaf. For the first 5 minutes 
  or so of the mixing cycle, scrape down the sides of the baking pan with a 
  rubber spatula to make sure the soft dough blends properly.
